Shem Blum of Gold Bar


 
Inside the petite but ornate walls of Lower Manhattan’s Gold Bar, nightlife alum and mixologist extraordinaire, Shem Blum, creates a few seasonally focused cocktails featuring Koval’s Dark Millet Whiskey. 
A recent addition to the team at the legendary and newly rejuvenated Gold Bar lounge, Shem has an implicit talent for creating a well-balanced drink that you’ll want to swig, not sip.

Millet Ginger Rush

2oz Dark Millet
1/2oz Koval ginger
3/4oz lemon juice
1/2oz maple syrup

Shaken and served up in a coupe
Orange twist garnish

Light and refreshing, this is a sweet and spicy take on a classic sour. 


Cherry Collins

2oz Dark Millet
1oz lemon
1/2oz simple
1/2oz blood orange purée
Muddled mint
Topped with Cheerwine cherry soda

Mix all ingredients with ice in a Collins glass
top with Cheerwine, Mint sprig garnish

Easy to drink and deliciously balanced, tart to sweet, 
using a southern cherry soda. 


Millet Old Fashion
 


2oz Dark Millet
Bar spoon Kronan Swedish Punsch
Bar spoon simple
Dash orange bitters
Dash Angostura bitters

Stir and pour over one large ice cube in a rocks glass 
Express oils of both Lemon & Orange twists

A subtle spin on a fan favorite using Swedish Punsch, 
a bottled Batavia Arrack infusion, adds a bold rounded rum palate.


Each of his delicious concoctions allows the rich and warm qualities of the Dark Millet to shine through, all the while achieving a deliciously satisfying and unique presence for each cocktail.


Getting to Know Shem Blum…
Originally from Woodstock, NY, Shem attended New York University, where he graduated cum laude with a B.A. in Philosophy. He then went on to achieve his Juris Doctor from Hastings College of the Law in San Francisco and subsequently returned to New York City where he began bartending and was soon admitted to the New York Bar.

Despite his success in academia, it became clear that Shem preferred one Bar to the other.

Over the last 10 years, he has operated the bar at some of New York’s most exclusive nightclubs and lounges, including his most recent gig at the famous Boom Boom Room atop the swanky Standard Hotel in the Meatpacking District. In addition to turning out sensational drinks, he also served as Brand Ambassador and Cocktail Consultant for The Original Moonshine, a Deutsch Family product, for over two years.

Shem is not only an artist behind the bar; he is also an incredibly talented stone sculptor.  In his spare time, he enjoys rock climbing, boxing, and hanging out with his dog, Gully.
